Sweet William 

My father used to say he was Wild Bill at night and sweet William in the morning. As his namesake I never really embraced Wild Bill. I guess becoming a Christian as a teen put the kabash on that. But in nearly every possible way I have had an affinity for sweet things – including my wife. Smile!

If I had to point out a point when my weight problem started I would go back to the nineties and my introduction to ice coffee. Here’s the nutrition information on my favorite one: 

Notice in the above scinerio there are 42 grams of sugar, 43 total Carbohydrates and zero fiber to mitigate. The Large coffee has 260 calories and 80 calories from fat. This thing is sweet and delicious calorie bomb that delivers very little nutrition. Until recently, I’ve been drinking probably 10-12 of these (including homemade versions) every week for more than a quarter century. By contrast the Javita ice coffee includes weight loss herbs Garcinia Cambogia and Gymnema Sylvestre that I sweeten with Stevia extract. Since I’m eating Keto, I use real cream to round it out at about a hundred plus calories per serving.

I’ve said before that my main problem has been insulin resistance developed over the last thirty years because of the immense quantities of carbohydrates I’ve been consuming. Ice coffee is just one of them. Stevia is now the zero calorie sweetener I use to ensure I am still able to satisfy my sweet tooth. Stevia is an aquired taste!

Terri, for years, has made me a cheesecake for my birthday. Cheesecake as you know has plenty of sugar in it, 32 carbs 27 of which are sugar. Every ounce of cheesecake is about a hundred calories from fat & carbs. So let’s cut the carbs by sweetening it with Stevia (lightly) remove the gram cracker crust in favor of a cashew nut and butter crust with a couple of tablespoons of real maple syrup (yes a sugar but just a little). Now, I don’t know the macros of it but that’s a desert a keto dieter can live with. Here’s my version with a little lime zest & juice to flavor:

In baseball terms, Stevia is in the starting lineup of my Ketogenic diet. It is one of the ways I can have my cheesecake and eat it too. I guess you could say this sweet William is Wild about Javita and Stevia.
